  • Total Time: 1 Hour

Description

This Pineapple Cake is a delicious combination of sweet pineapple flavor and rich, creamy frosting. With a soft, moist cake base made from crushed pineapple and simple pantry ingredients, it’s a dessert that feels light yet indulgent. Topped with a smooth layer of cream cheese frosting and optional chopped nuts, each bite is a perfect blend of tropical sweetness and creamy richness.

Ingredients

Scale
  • For the Cake:
    • 2 cups all-purpose flour
    • 2 cups granulated sugar
    • 2 large eggs
    • 1 teaspoon baking soda
    • 1 teaspoon vanilla extract
    • Pinch of fine salt
    • 1 can (20 oz) crushed pineapple in natural juice (no syrup)
    • 1 cup finely chopped nuts (optional, for texture)
  • For the Cream Cheese Frosting:
    • 1/2 cup (1 stick) unsalted butter, softened
    • 8 oz cream cheese, softened
    • 1 teaspoon vanilla extract
    • 1 1/2 cups confectioners’ sugar

Instructions

  • Preheat the Oven: Set your oven to 350°F (180°C). Grease a 9×13-inch baking pan to prepare for the batter.
  • Make the Cake Batter:
    • In a large mixing bowl, combine the flour, sugar, eggs, baking soda, vanilla extract, salt, and crushed pineapple (including juice).
    • Mix until all ingredients are well incorporated.
  • Bake the Cake:
    • Pour the batter into the prepared baking pan, spreading it evenly.
    • Place in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Prepare the Cream Cheese Frosting:
    • While the cake is baking, in a separate bowl, cream together the softened butter, cream cheese, and vanilla extract until smooth.
    • Gradually add the confectioners’ sugar, mixing until the frosting is creamy and free of lumps.
  • Frost the Cake:
    • Once the cake is baked and slightly cooled, spread the cream cheese frosting evenly over the top.
    • For added texture and flavor, sprinkle the finely chopped nuts over the frosting, if desired.
  • Set and Serve: Let the cake set for a few minutes before slicing and serving.

Notes

  • Don’t Drain the Pineapple: Using the juice in the crushed pineapple adds moisture and sweetness to the cake.
  • Softened Ingredients for Frosting: Make sure the butter and cream cheese are softened for smooth, creamy frosting.
  • Cool the Cake Slightly: Allow the cake to cool a bit before frosting to prevent the frosting from melting.
