  • 1 1/2 cups milk chocolate chips

Caramel Layer

  • 1 cup butter
  • 1 cup light brown sugar
  • 1/4 cup honey
  • 2 tablespoons heavy cream

Pecan Topping

  • 1 1/2 cups pecan halves, roughly chopped

Instructions

  1. Prepare the Shortbread Layer: Preheat the oven to 350°F (175°C). In a mixing bowl, combine the flour and sugar. Cut in the butter until the mixture forms coarse crumbs. Press the mixture evenly into a 9×13-inch baking pan. Bake for 20 minutes or until lightly golden, then cool slightly.
  2. Add the Chocolate Layer: Sprinkle the chocolate chips over the slightly cooled shortbread layer. Let them melt for a few minutes, then spread evenly across the top with a spatula.
  3. Create the Caramel Layer: In a medium saucepan over medium heat, melt the butter and brown sugar together until the mixture begins to bubble. Add the honey and heavy cream, stirring constantly for about 5 minutes until the caramel thickens. Pour this caramel mixture over the chocolate layer.
  4. Finish with the Pecan Topping: Evenly sprinkle the chopped pecans over the caramel layer, pressing them gently to ensure they stick.
  5. Set and Serve: Chill the dessert in the refrigerator for about 2 hours, or until fully set. Once firm, cut into squares and serve.
