  • 2 cups finely crushed graham cracker crumbs
  • 1 cup sweetened shredded coconut (plus extra for rolling)
  • 1/2 cup powdered sugar
  • 1/2 teaspoon almond extract (optional, for extra flavor)

Instructions

  1. Combine Ingredients: In a large mixing bowl, combine the crushed pineapple, graham cracker crumbs, shredded coconut, powdered sugar, and almond extract (if using). Stir until the mixture is fully combined and forms a sticky dough.
  2. Form Balls: Scoop tablespoon-sized portions of the mixture and roll them into small balls using your hands.
  3. Roll in Coconut: Roll each ball in additional shredded coconut to coat.
  4. Chill: Arrange the balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour to allow them to firm up. Serve chilled or at room temperature.
