- For the Beef Layer:
- - 2 pounds ground beef
- - 1 medium onion chopped
- - 1 medium green bell pepper chopped
- - 1 15 oz can diced tomatoes (drained)
- - 1 6 oz can tomato paste
- - 1 teaspoon garlic powder
- - 1 teaspoon salt
- - 1 teaspoon black pepper
- For the Creamy Noodles:
- - 12 oz wide egg noodles
- - 8 oz sour cream
- - 8 oz cream cheese softened
- - 1/2 cup green onions sliced
- For the Topping:
- - 2 cups shredded cheddar cheese
Cook the Noodles: Bring a large pot of salted water to a boil. Cook the egg noodles according to package directions until al dente. Drain and set aside.
Prepare the Beef Mixture: In a large skillet over medium-high heat, cook the ground beef, onion, and green bell pepper until the beef is browned and the vegetables are softened. Drain any excess grease. Add the diced tomatoes, tomato paste, garlic powder, salt, and pepper. Stir to combine and let simmer for 5-7 minutes.
Make the Creamy Noodles: In a large mixing bowl, combine the cooked noodles, sour cream, cream cheese, and green onions. Mix until the noodles are evenly coated.
Assemble the Casserole: Preheat your oven to 350°F (175°C). In a 9x13-inch baking dish, layer half of the creamy noodles on the bottom. Spread half of the beef mixture over the noodles. Repeat with the remaining noodles and beef mixture. Top with shredded cheddar cheese.
Bake: Bake the casserole uncovered for 25-30 minutes, or until the cheese is melted and bubbly.
Serve: Let the casserole cool slightly before serving. Garnish with additional green onions if desired. Enjoy!
- Make Ahead: You can assemble the casserole up to a day in advance. Cover and refrigerate, then bake as directed.
- Freezing: This casserole freezes well. Assemble and freeze before baking for up to 3 months. Thaw overnight in the refrigerator and bake as instructed.
- Customizations: Add cooked mushrooms, black olives, or a pinch of red pepper flakes for extra flavor.
