For the Crust:
- - 1 1/2 cups chocolate cookie crumbs
- - 1/4 cup unsalted butter melted
- For the Cheesecake:
- - 24 oz cream cheese softened
- - 1 cup granulated sugar
- - 3 large eggs
- - 1 tsp vanilla extract
- - 1/4 cup cocoa powder
- - 1/4 cup all-purpose flour
- - 1/2 cup sour cream
- - 1/2 cup chopped maraschino cherries
- - 1/2 cup mini chocolate chips
For the Topping:
- - 1/2 cup heavy cream
- - 1/4 cup powdered sugar
- - 1 tsp vanilla extract
- - 1 cup whipped cream
- - 1/2 cup chocolate shavings
- - Fresh cherries for garnish
Prepare the Crust: Preheat oven to 325°F (160°C). Mix chocolate cookie crumbs and melted butter, press into a 9-inch springform pan, and bake for 10 minutes. Cool.
Make the Cheesecake Filling: Beat cream cheese until smooth. Add sugar and beat until creamy. Add eggs one at a time, mixing well. Stir in vanilla, cocoa powder, and flour. Fold in sour cream, cherries, and chocolate chips.
Bake the Cheesecake: Pour filling over crust. Bake for 50–60 minutes until edges are set and center is slightly jiggly. Cool in the oven for 1 hour, then chill in the fridge for at least 4 hours.
Make Whipped Topping: Whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread over chilled cheesecake.
Decorate and Serve: Garnish with chocolate shavings and fresh cherries. Slice and serve!
