- - 1 medium onion diced
- - 3 cloves garlic minced
- - 2 large carrots sliced
- - 3 celery stalks sliced
- - 1 green bell pepper diced
- - 1 small head of cabbage chopped
- - 1 can 14 oz diced tomatoes (with juices)
- - 6 cups low-sodium vegetable or chicken broth
- - 1 teaspoon dried oregano
- - 1 teaspoon dried basil
- - 1/4 teaspoon red pepper flakes optional
- - Salt and pepper to taste
- - 1/2 cup fresh parsley chopped, for garnish
Sauté the Vegetables (Optional): Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté for 2-3 minutes until softened.
