- - 2 cups corn fresh, canned, or frozen
- - 1/4 cup cornmeal
- - 1/4 cup all-purpose flour
- - 1 tsp smoked paprika
- - 1 egg
- - 1 green onion chopped
- - 1/2 cup grated Parmesan or cheese of your choice
- - 1 handful cilantro chopped
- - 1 tbsp lime juice
- - Salt and fresh cracked pepper to taste
- - 1 tbsp oil for cooking
- - Sour cream or heavy cream for garnish
In a large bowl, mix the corn, cornmeal, flour, smoked paprika, egg, Parmesan, green onion, cilantro, lime juice, salt, and pepper. Add a small amount of water if the mixture feels too dry.
Heat 1 tbsp of oil in a skillet over medium heat. Spoon the corn mixture into the pan to form patties.
Cook each fritter for about 4 minutes per side, or until golden brown and crispy on the edges.
Remove from the pan and garnish with a dollop of sour cream or heavy cream. Serve warm and enjoy!
