Ingredients

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 8 ounces mushrooms sliced
  • 4 cloves garlic minced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  • Preheat the Oven: Preheat oven to 400°F (200°C).
  • Prepare Chicken Breasts: Using a sharp knife, carefully cut a pocket into each chicken breast, being cautious not to cut all the way through. Season both the inside and outside of each chicken breast with salt and pepper.
  • Cook Mushrooms and Garlic: In a large skillet, heat olive oil over medium-high heat. Add butter and let it melt. Add mushrooms to the skillet, cooking for about 5-7 minutes until golden brown and tender. Add minced garlic and cook for an additional 1-2 minutes until fragrant. Remove skillet from heat and allow to cool slightly.
  • Prepare the Cheese Mixture: In a small bowl, mix together shredded mozzarella and grated Parmesan cheese.
  • Stuff the Chicken: Spoon the mushroom mixture and cheese mixture into each chicken breast, ensuring the fillings are evenly distributed.
  • Bake: Place the stuffed chicken breasts in a baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.
  • Garnish and Serve: Garnish with chopped fresh parsley before serving.

Notes

  • Avoid Overstuffing: Be careful not to overfill the chicken pockets, as this can cause the filling to spill out during baking.
  • Sealing the Chicken: For extra security, use toothpicks to hold the edges of the chicken together and keep the filling inside while it bakes.
  • Cook to Perfection: Chicken is fully cooked at an internal temperature of 165°F (74°C). Use a meat thermometer to check for doneness to avoid overcooking.
  • Rest Before Slicing: Let the chicken rest for a few minutes after baking to allow the juices to redistribute, keeping it moist.
