- - 1/2 cup powdered sugar plus more for coating
- - 1 tsp vanilla extract
- - 1/2 tsp peppermint extract
- - 2 cups all-purpose flour
- - 1/4 cup cocoa powder
- - 1/2 tsp salt
- - 3/4 cup mini chocolate chips
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
Mix in the vanilla extract and peppermint extract.
In a separate bowl, whisk together the flour, cocoa powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Fold in the mini chocolate chips.
Roll the dough into 1-inch balls and place them on the prepared baking sheet about 2 inches apart.
Bake for 10-12 minutes, or until the bottoms are set. The cookies will not spread much.
Allow the cookies to cool for 5 minutes on the baking sheet, then roll them in powdered sugar while still warm.
