Ingredients

  • - 2 cups chopped pecans
  • - 1 pound milk chocolate
  • - 8 oz dark chocolate
  • - 6 oz white chocolate
  • - 40-45 soft caramels unwrapped

Instructions

  • Layer Ingredients in Crock Pot: Place the chopped pecans along the bottom of a crock pot, then layer the milk chocolate, dark chocolate, and white chocolate on top.
  • Melt Chocolate: Place the lid on the crock pot and set it to LOW for 1 hour.
  • Stir: After 1 hour, carefully remove the lid, being mindful of any moisture that may have accumulated on the lid to avoid dripping into the chocolate. Stir the melted chocolates and pecans until smooth.
  • Form Candies: Drop 1 tablespoon of the chocolate mixture onto a baking sheet lined with parchment paper. Place an unwrapped caramel on top, then add an additional 1/2 to 1 tablespoon of the chocolate mixture on top to cover the caramel.
  • Set: Place the baking sheet in the refrigerator and allow the candies to set until firm, about 1 hour.
  • Serve: Enjoy at room temperature and store any leftovers in an airtight container.

Notes

- Variations: Use salted caramel for a sweet-and-salty flavor.
- Storage: Store the candies in an airtight container at room temperature for up to 1 week or in the refrigerator for longer storage.
- Tip: For an extra festive look, drizzle melted white chocolate over the finished candies or sprinkle with sea salt.
