Ingredients
  

For the Cake:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Pinch of fine salt
  • 1 can 20 oz crushed pineapple in natural juice (no syrup)
  • 1 cup finely chopped nuts optional, for texture

For the Cream Cheese Frosting:

  • 1/2 cup 1 stick unsalted butter, softened
  • 8 oz cream cheese softened
  • 1 teaspoon vanilla extract
  • 1 1/2 cups confectioners' sugar

Instructions
 

  • Preheat the Oven: Set your oven to 350°F (180°C). Grease a 9x13-inch baking pan to prepare for the batter.

Make the Cake Batter:

  • In a large mixing bowl, combine the flour, sugar, eggs, baking soda, vanilla extract, salt, and crushed pineapple (including juice).
  • Mix until all ingredients are well incorporated.

Bake the Cake:

  • Pour the batter into the prepared baking pan, spreading it evenly.
  • Place in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Prepare the Cream Cheese Frosting:

  • While the cake is baking, in a separate bowl, cream together the softened butter, cream cheese, and vanilla extract until smooth.
  • Gradually add the confectioners' sugar, mixing until the frosting is creamy and free of lumps.

Frost the Cake:

  • Once the cake is baked and slightly cooled, spread the cream cheese frosting evenly over the top.
  • For added texture and flavor, sprinkle the finely chopped nuts over the frosting, if desired.
