- - ¾ cup water
- - 1 15 oz can refried beans
- - 1 10 oz can enchilada sauce
- - ¼ cup diced tomatoes
- - 1 ½ cups shredded Colby Jack cheese
- - 8 taco-sized flour tortillas
- - 1 tablespoon vegetable oil
Preheat Oven: Preheat your oven to 400°F (200°C).
Cook the Ground Beef: In a large skillet over medium heat, brown the ground beef, breaking it into small pieces as it cooks. Drain any excess fat.
Add Taco Seasoning: Stir in the taco seasoning and water. Bring the mixture to a boil, then reduce the heat and simmer until most of the liquid is absorbed. Remove from heat and set aside.
