Pineapple Christmas Balls

Ingredients
  

  • 1 1/2 cups crushed pineapple well-drained
  • 2 cups finely crushed graham cracker crumbs
  • 1 cup sweetened shredded coconut plus extra for rolling
  • 1/2 cup powdered sugar
  • 1/2 teaspoon almond extract optional, for extra flavor

Instructions
 

  • Combine Ingredients: In a large mixing bowl, combine the crushed pineapple, graham cracker crumbs, shredded coconut, powdered sugar, and almond extract (if using). Stir until the mixture is fully combined and forms a sticky dough.
  • Form Balls: Scoop tablespoon-sized portions of the mixture and roll them into small balls using your hands.
  • Roll in Coconut: Roll each ball in additional shredded coconut to coat.
  • Chill: Arrange the balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour to allow them to firm up. Serve chilled or at room temperature.

Notes

  • Draining Pineapple: Ensure the pineapple is well-drained to avoid a mixture that’s too wet. Press gently with a paper towel if necessary.
  • Festive Garnish: For an extra holiday touch, press a small cherry on top of each ball before chilling.
