Mix the Dough: In a medium bowl, combine the crushed cookies, softened cream cheese, vanilla extract, and salt. Mix until a smooth, dough-like consistency forms.
Shape the Truffles: Scoop out 1-inch portions of the dough and roll them into balls using your hands. Place the balls on a parchment-lined baking sheet.
Chill: Refrigerate the truffle balls for 30 minutes to firm them up.
Melt the Chocolate: While the truffles chill, melt the white chocolate chips or candy melts in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
Coat the Truffles: Remove the truffle balls from the fridge. Dip each ball into the melted white chocolate, ensuring it's fully coated. Place back on the parchment-lined baking sheet.
Decorate: Before the chocolate sets, sprinkle the truffles with holiday sprinkles or drizzle additional melted chocolate on top for decoration.
Set: Let the truffles sit at room temperature or in the fridge until the chocolate hardens.
