Ingredients
  

- For the Truffles:

  • - 2 cups sugar cookies crushed (about 12 cookies)
  • - 4 oz cream cheese softened
  • - 1 tsp vanilla extract
  • - 1/4 tsp salt
  • - 1 cup white chocolate chips or candy melts for coating
  • - 2 tbsp sprinkles optional, for decoration

Instructions
 

  • Crush the Cookies: Place sugar cookies in a food processor and pulse until finely crushed. If you don’t have a food processor, crush them in a zip-top bag using a rolling pin.
  • Mix the Dough: In a medium bowl, combine the crushed cookies, softened cream cheese, vanilla extract, and salt. Mix until a smooth, dough-like consistency forms.
  • Shape the Truffles: Scoop out 1-inch portions of the dough and roll them into balls using your hands. Place the balls on a parchment-lined baking sheet.
  • Chill: Refrigerate the truffle balls for 30 minutes to firm them up.
  • Melt the Chocolate: While the truffles chill, melt the white chocolate chips or candy melts in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
  • Coat the Truffles: Remove the truffle balls from the fridge. Dip each ball into the melted white chocolate, ensuring it's fully coated. Place back on the parchment-lined baking sheet.
  • Decorate: Before the chocolate sets, sprinkle the truffles with holiday sprinkles or drizzle additional melted chocolate on top for decoration.
  • Set: Let the truffles sit at room temperature or in the fridge until the chocolate hardens.
